About the Job
General Purpose: Ensures that Members and Guests have a pleasant and memorable dining experience by being well-versed in fine dining, wine service, and the particulars of the various club food and beverage menus. Ensuring guests and member experience exceed expectations. Responsible for the setup, maintenance, cleanliness, and safety of dining areas and event space(s), coordinating food service between the kitchen and staff, and enforcing PVGC rules and policies.
Essential duties include but are not limited to:
- Report to work on time and in proper uniform
- Approach all interaction with Members, guests, and colleagues in a courteous, service-oriented manner
- Promote a comfortable and world-class atmosphere with professionalism and promptness
- Direct and manage execution of dining room service and member private events and parties
- Ensure all service staff consistently meet the uniform requirements for each shift
- Conduct regular pre-shift meetings with dining room service staff & banquet staff to build rapport and ensure dining room staff remains well-informed (with F&B Operations Manager when available)
- Review training procedures, status of side-work, special accommodations by table, specialty menus etc. at the start of each shift
- Effectively and regularly communicate expectations and service goals to staff
- Create floorplan at the start of each shift and assign staff to sections according to skill level and use fair rotation methods
- Greet Members and guests and rotate seating according to staff availability and capability
- Oversee the completion of opening and closing duties/checklists in a timely fashion
- Inspect table place settings prior to the commencement of each meal service including: linens, china, glassware, silverware, b & b's, salt and pepper, centerpieces, etc.; ensure correct placement and that each are clean, undamaged, and polished (as applicable) and that each respective table setting is uniform across each dining outlet
- Inspect buffet set-ups (as applicable), prior to the commencement of each event including: linens, chafing dishes, dishes, service utensils, food labels/signage, quantities of food and support dishes/utensils; ensure correct placement and that each are clean, undamaged, and polished (as applicable)
- Inspect linens daily for proper appearance and maintain tidy linen storage areas
- Communicate with Receptionist/Hostess to ensure all Member and guest needs are being met
- Remain in consistent contact with kitchen staff to ensure effective communication between food production and food service
- Monitor service team to ensure all operating procedures are followed
- Supervise staff's use of the POS system; analyze requests for check adjustments (voids, transfers, etc.) and complete requests as needed and as warranted; document inappropriate requests/mistakes as necessary
- Ensure that state and local laws and the Club's policies and procedures for serving alcoholic beverages are constantly followed
- Supervise clearing and post meal service cleanup and trash removal; secure the facilities when needed/requested
- Monitor service levels and cut staff during a shift as necessary to ensure optimal operational and budgetary efficiency
- Maintain clean and orderly back service areas, pre-function staging areas, and storage areas
- Ensure that all china, glassware, silverware, linens, etc. are returned to their proper locations
- Assist with inventory needs for banquet and dining room service ware, equipment, and supplies
- Promote service and sales initiatives among dining room staff
- Assist with the creation and execution of employee incentive programs and monitor team morale
- Assist with the development of short-term and long-term F&B department goals
- Assist with supervising and evaluating of dining room service staff and banquet staff
- Attend BEO meetings as requested to best ensure all needs of clients are being met
- Coordinate with HR and the F&B management team to ensure attendance records by dining room service & banquet staff are accurate for the shift
- Consistently promote a safe working environment
- Consistently promote a harassment-free work environment and reports any infractions, or suspected infractions or claims, to HR as soon as possible after an observation is made or a receipt of a claim from a staff member
- Provide regular activity updates to F&B management team; notifies management of Member and guest complaints as soon as possible; complete Dining Room Shift Report for any issues that arise during dining room service and event(s)
- Assist with special facility events including, but not limited to: holiday brunches, wine dinners, Board and Committee events, Northrop Grumman NCAA tournament, special member holiday events, etc.
- Follow all established Club and departmental policies, procedures, standards, systems, controls and objectives including enforcement of Clubhouse dress code
- Attend meetings and trainings as required/requested
- Perform other duties as requested
Experience & Education:
- High school diploma; College degree preferred
- Minimum four years' serving experience
- Previous supervisory experience in fine dining or upscale environment; country club experience preferred
- Basic knowledge of food and beverage operations
- Basic knowledge of liquor and public entertainment licenses
- At least 21 years of age to serve alcohol
- Serv-Safe Manager certified
- RBS Alcohol certified
- CPR certified preferred
Physical Requirements:
- Frequently stands/walks for prolonged periods of time, at least eight hours
- Ability to climb stairs, balance, stoop, kneel, crawl, crouch, bend, stretch, twist, and reach
- Ability to push, pull, carry, and lift at least 50 pounds; ability to move furniture
- Ability to withstand continuous repetitive motions
- Primarily works indoors; occasionally works in outdoor weather conditions
- May be exposed to loud noise
- May come into contact with fumes, open flames, hot and cold surfaces, airborne particles, toxic or caustic chemicals, sharp knives and other objects
